Apple Knobby

3 c chopped apples 
1 c sugar 
2 T melted butter
1 c flour
1 t cinnamon
1 t soda
1/2 t salt
1 t vanilla
1 c chopped nuts
Put apples in mixing bowl; add sugar and butter.  Stir well.  Sift flour, cinnamon, soda and salt into apple mixture.  Stir just enough to moisten dry ingredients.  Add vanilla and nuts; mix lightly.  Press mixture into greased 8 X 10-inch pan.  Bake at 350f for 45 minutes.  Serve warm or cold with ice cream or whipped cream, if desired.

Apple Pan Dowdy

 
4 c apples, thinly sliced small pieces
1 c sugar
1 egg
1/2 c flour
2 t baking powder
1 T melted butter
1 t vanilla
1/2 c chopped walnuts
1/2 c chopped dates
Mix flour and baking powder.  Combine with other ingredients and mix.  Bake in 8X14- inch pan at 400f for 40 minutes.

Kiwi Fruit Gelato

 
1 c water
1/2 c light corn syrup
5 T lemon juice
1/2 c sugar
4 kiwi fruit; pared
1/4 t lemon peel, grated
Combine water, sugar and corn syrup in saucepan.  Cook and stir 2 min. or until sugar is dissolved.  Puree kiwi in processor or blender to equal 3/4 cup puree.  Add lemon juice, peel and sugar to mix.  Pour into shallow metal pan and freeze for about 1 hour or until mixture is firm, but not solid.  When chilled, spoon into a chilled bowl and beat with electric mixer until mix is light and fluffy.  Return it to the freezer for approx. 2 hours or until firm enough to scoop.

New Banana Pudding

 
2 large pkg.. vanilla instant pudding mix
1 small pkg. banana instant pudding
3 1/2 c milk
8 oz sour cream
8 oz cool whip
5 big bananas, cut and sliced
vanilla wafers
Mix pudding mixes with milk, stir well.  Fold in sour cream, cool whip and bananas.  Line dish with vanilla wafers.  Layer pudding mixture and vanilla wafers; ending with pudding on top.  Cover with additional cool whip and garnish with banana slices.

Raisin Roll

 
1 box seedless raisins
1 box graham cracker crumbs
1 lb bag marshmallows
1 lb course chopped pecans
Place marshmallows in pan.  Heat with just enough water to melt them. Mix all other ingredients with marshmallow except 1 c graham cracker crumbs.  Add milk if very dry, just enough to moisten.  Roll in cloth, log style, sprinkle with remaining cracker crumbs.  Store in refrigerator for several days.  Can keep in freezer for a year.
